Coffee Loaf/ Cake

This is just another version of the simplicity cake I have made; coffee cake. I hate coffee, but I love tea with a slice of coffee cake or loaf. It is heavenly and enough of a pick-me-up to get me through the day. It is so simple and quick to make, no effort or energy required for those of you who need three cups of coffee a day! Wake up everyone to this great idea!


Ingredients:
  • 2 tblsp margarine or butter
  • 1 cup self-raising flour
  • 1 cup sugar
  • 1/2 cup milk
  • 2 eggs
  • 1/2 tsp vanilla flavouring
  • 3 1/2 tsp of instant coffee dissolved in 3 tblsp of boiling water, cooled
Method:
Grease cake tin. Heat oven to 180'C fan-forced. Melt butter. Beat in other ingredients. Put in tin. Bake for 30 minutes or until a skewer can be inserted and come out clean. Serve with coffee or tea.

Honey Loaf

This is a sweet treat and a quick fix (cooking time takes a while though). It is very easy to prepare and is very satisfying.


Ingredients:
  • 250ml milk
  • 125g raw sugar
  • 125g runny honey
  • 280g wholemeal self-raising flour
Method:
Heat oven to 180'C fan forced. Grease a loaf tin. Heat half quantity of milk and stir in sugar and honey. Add rest of milk. Fold in the flour. Bake 45 mins -1 hour. Delicious with butter when fresh, and honey later on if it ever gets to that stage!!

Coffee Square Slice

This is a recipe from my Grandma's friend. It is a combination of a coffee cake and a fruit cake. Delicious idea, perfect with coffee and friends. My sister went to Japan recently and she brought me back some mini hello kitty cake tins. So in this cake I transferred some of the mixture into these pans and put the rest in a lamington tin. They turned out so cute!




Ingredients:
  • 180g butter
  • 1 cup sugar
  • 350g mixed fruit
  • 1 tsp cinnamon
  • 1 tsp mixed spice
  • 1 tsp garam marsala
  • 2 cups walnuts
  • 1 cup milk, thickened with juice of 1 lemon
  • 1 tsp bi-carb soda
  • 1 1/2 cups flour

Method:
Into a saucepan put butter, sugar, fruit, spices and walnuts. Simmer for a few minutes, then cool. In a separate bowl, add milk, lemon and bi-carb soda. Add to saucepan and combine.

Bake in a lamington tin for 35-45 minutes at 180'C fan-forced. Ice with lemon icing and sprinkle with cinnamon.

Coconut Loaf with Passionfruit Sauce

This is a beautiful, citrus delight! Coconut and Passionfruit mix divinely together! However, the passionfruit sauce is optional. Enjoy! This recipe is very simple and quick to prepare (it takes a while to cook). I have had so many morning and afternoon teas with friends this week and have made about four of these loaves! It is sooo simple and easy; with only four ingredients this loaf is a winner!!! I am posting this recipe for Britany who enjoys cooking as much as I do! Thanks for the wonderful memories!


Ingredients:
For Loaf:
  • 1 cup coconut
  • 1 cup Self-raising flour
  • 3/4 cup sugar
  • 3/4 cup milk
For Sauce:
  • 170g passionfruit pulp fresh or from a can
  • 50g water
  • 60g sugar

Method:
Heat oven to 190'C fan forced. Mix all ingredients together and cool in well greased loaf tin for 40-45 minutes (don't over cook, it will go dry).

For sauce, place ingredients in a small saucepan and cook for 7 minutes. Allow to cool slightly before serving.

Blueberry Custard Loaf

The first time I took a bit of this mouth watering dessert, it was Christmas. While we still had the traditional Christmas pudding this second option immediately became a favourite among friends and family. My cousin prepared this dessert and simply explained it as a blueberry ice cream loaf. What forms the ice cream effect is the frozen cream and custard, a beautiful blend. Personally, custard is one of the many things that I do not like, but I was encouraged to try this dessert and I strongly recommend everybody try this dessert. The custard and cream mix and set well, complementing each other perfectly. As a fussy eater, I can honestly say that I could not specifically taste the custard - the flavour of the blueberries and cream is stronger. NOTE: For greater ease in preparation time, this dessert can be made up to one week in advance.



Ingredients:
  • 250g Unibic Sponge Finger Savoiardi Biscuits
  • 2 tblsp Orange Juice
  • 500g Premium Style Custard
  • 300ml Thickened Cream, whipped
  • 2 x 125g punnets blueberries

Method:
Line an 11c x 24cm (base measurement) loaf pan with baking paper, allowing the long edges to overhang by 5cm. Arrange half the sponge fingers, crossways, over base of prepared pan, trimming edges so they fit snugly. Drizzle with orange juice. Gently combine custard and cream. Pour half the custard mixture over the sponge biscuits. Top with another layer of biscuits. Scatter over half the blueberries and pour over remaining custard mixture. Scatter over remaining blueberries. Place in freezer overnight to set. Remove from freezer 10 mins before serving. Use baking paper to lift custard loaf out of pan. Cut into slices and serve.

Banana Bread

This bread is something that I look forward to in the mornings. I will wake up and have two slices of banana bread for breakfast. It is truly something delicious and simple. In my experience it tastes best with margarine spread over one side and then heated for 30 seconds in the microwave. It tastes really nice heated and in the morning. I usually make it the night before and serve it in the morning. Another tip which makes this recipe really useful is that the bananas can be used (and is preferably used) when they are really ripened. This means that the bananas are bad to eat, they are all bruised and squishy - perfect for making banana bread. Banana bread is a simple and convenient way to use bananas that have not been eaten when they are most fresh.




Ingredients:
  • 125g butter
  • 1 1/2 cups brown sugar
  • 3 ripe bananas, mashed
  • 2 cups flour
  • 1 tsp bi-carb soda
  • 1/2 tsp salt
  • 1 egg

Method:
Cream butter and sugar until light and fluffy. Beat in egg and bananas. Sift in dry ingredients and stir into mixture. Bake at moderate temperature (150'C fan-forced) in loaf tin for 45-60 minutes (it is better to cook for a longer time at a lower temperature).
